Can I get the ckoke with the arm in? Sort of north south arm triangle? I’m
pretty sure I’ve seen someone doing it
you have to trap the arm against the face so they get choked with their own shoulder on that side. similar to a darce

Can I learn BJJ just by watching videos online or is that not recommended? 
If you mean can you get the knowledge from videos and use it in practice with a training partner, the answer is yes. It's not ideal but if it's all you can do then it's better than nothing. On the other hand, if you're asking if you can learn BJJ just by watching it without ever practicing the movements, then no. You couldn't learn BJJ that way any more than you could learn to play the piano or golf that way.
You can "know" what the move is, but you will never actually understand it until you feel what it is like to work against someone who is trying to stop you.
Bjj is all muscle memory. you should definitely go to a gym if you want to learn
